Shift close in the UAE: how to stop the drawer coming up short
Dinelax POS · 6 min read · Updated 17 October 2026
A drawer that is AED 20 short every night is AED 7,000 a year. Most of it is not theft — it is a payout nobody wrote down, a card bill keyed as cash, or change given wrong. A good shift close finds which.
What should be in the drawer
Expected cash is simple arithmetic — if every movement is recorded:
| Opening float | AED 200.00 |
| + Cash sales | AED 1,530.50 |
| − Cash paid out (gas cylinder, with a reason) | AED 85.00 |
| Expected in the drawer | AED 1,645.50 |
| Counted by the cashier | AED 1,625.50 |
| Variance | − AED 20.00 |
What does not belong in that sum: card sales (they settle through the card machine's batch), delivery-partner orders (the partner pays you), and pay-later bills (they are still owed).
Count blind
If the cashier can see the expected figure before counting, the count tends to "find" it. A blind count asks for the counted cash first and only then shows the expected amount and the difference. That turns the variance into a real number you can act on.
Where shortages usually come from
- Unrecorded payouts — cash taken for supplies or a delivery tip with no note.
- Card keyed as cash — or a split bill recorded as all cash.
- Change errors — at rush hour, on a AED 200 note.
- Voids — a paid bill cancelled after the money went into the drawer.
How Dinelax runs the close
- A cashier counts blind: the expected cash and the difference stay hidden until the count is entered.
- Cash in and cash out are recorded with a reason during the shift.
- One bill can be split between cash and card, with the card brand recorded; the card total is there to match the machine's batch.
- Delivery-partner orders and pay-later (Credit Book) bills stay out of the expected cash.
- Cancelling a bill needs the Void PIN and a reason, and the cancellation is kept on record.
- An X-report mid-shift, a shift report at the close, and the close report can go to the owner on WhatsApp.

A closing checklist
- Record every payout before closing — with a reason.
- Run the card machine's settlement and keep the slip.
- Count the drawer and enter it before looking at any total.
- Compare card sales with the slip, and cash with the expected figure.
- Write down the reason for any variance on the same night.
